Our friends at @diginn have been serving sunchoke on the menu for a while, and people loved it when they tried it, but probably wouldn't have picked it up at the market on their own.

I've been growing my own for a few years now. A good low maintenance perennial 🌱 Tastes like a cross between a potato and mushrooms to me. The flowers are pretty too. I mainly grow mine as a deer feed though, to keep them away from the main garden. Maybe not a great choice for those with weak stomachs 😉😄

i like to make pesto out of stems/greens of all types - collards, kale, carrottops, etc etc...perfect sauce for anything and stays good for infinity (almost)
