We keep our seed trays covered for the first couple of days after germination in order to get some longer stems on our micros. The generally get their color after a day or two in the sun.
Potatoes are taking root!

This little all blue potato (one of many) will produce a few pounds of new potatoes in just a few months.

olivettefarm @Rachna I won't :( my parents will actually be in town that weekend so I'll be showing them around Asheville. I'll be trying to make my way up to NY this offseason hopefully though.

Red Russian Kale, Napa Cabbage, radish micro, dill and Tuscan Kale. These are all from thinning out our seedlings in the greenhouse. I always love making salads off of our thinnings #nofoodwaste

Leeks doing their morning stretches.

Our little leeks are happy in the greenhouse. It's easy to forget that the giant leeks you're used to start out more like a blade of grass.

Amaranth Microgreens

A study found that amaranth micros have 4-6 times more nutrients than their full grown counterparts. They have a flavor very similar to beet micros, just a bit more mild.
