Mashed eggplant for the win. I just used whatever vegetables I had on hand.

mrscorco @Rachna I didn't spell it right. It's Kumato - a brown tomato, sweeter than a regular tomato due to the higher fructose content. I was going to pair it with mozzarella for a salad!
