darkchocolatepeanutbutter 8yr Since it's fall, chili is my go-to meal for dinner. It's easy to make vegan if you swap out animal stock for vegetable stock and ground meat with either tempeh or tofu. It's completely up to you so have fun with it. One of my favorite vegan meals is these Roasted Garbanzo Beans https://www.annefood.com/blog/fennel-roasted-garbanzo-beans with sautéed swiss chard. Look for pasta recipes on there too, because many of those can be made vegan my omitting the cheese garnish.
