Such a hard question. I always ponder this while reading the Behind The Plate answers... I guess parsley, cilantro and basil. But it's hard for me to omit tarragon .

(No but srsly I wouldn't know what to do without cumin. I think cumin and basil would do it for me.)

Can cumin be considered more a "spice" than an "herb"? If so, you're safe @Ricky

I checked because I wasn't sure, but an herb is "any plant with leaves, seeds, or flowers used for flavoring, food, medicine, or perfume." So maybe seeds qualify?

I agree with @Ricky Cumin may be a spice, but it lends itself to so many different ethnic styles! But to be 'herb' specific, give me parsley, thyme and mint!!
