Love it too. Though my go to these days is zucchini noodles. I always toasted mine @lauren. Didn't even know you could boil it 😮

I roast just as brittanymbarton mentioned, then I sauté with a little garlic. So yummy and pretty much guilt free!

@ Lauren while you are at it, try tossing it up in a Pan with olive oil, salt, pepper, garlic , herbs & then some Parmesan & torn basil leaves.

@lauren nah, straight into the pan , sauté with skin on if you fancy the texture ( I do).
If you feel like experimenting , add a little fresh basil pesto at the end, along with pieces of sundried tomato & olives.

@garv great ideas! Hahah posting before bed means good dreams about tasty food! another spaghetti squash idea that has worked well for me is to bake it like a casserole - with some egg, veggies, cheese- it's like a better healthier version a strata

I do this all the time- I also sauté some shallots, garlic with a little turkey sausage. Add the roasted spaghetti squash with a little olive oil, oregano and a little shredded Parmesan.
