Gorgeous multi colored carrots roasted and dressed!
I rummage my refrigerator after shopping at the farmers market to come up with easy, but scrumptious vegetable recipes. Found these gorgeous carrots on Saturday.
Perfectly roasted colorful carrots. Spicy cayenne mustard dressing, topped with roasted pistachios and mint.
1 1/2 lb. multicolored carrots, larger carrots halved lengthwise
2 tablespoons olive oil
Kosher salt
Freshly ground pepper
Cayenne mustard dressing
1/4 cup olive oil
1/4 teaspoon cayenne
1 tablespoon Dijon mustard
1 lime juice
1 tablespoon honey
Kosher salt
Freshly ground pepper
1⁄3 cup pistachios, toasted & roughly chopped
2 tablespoons mint, chopped
1. Heat oven to 375°. Toss carrots with 2 tablespoon olive oil and salt
2. transfer to a baking sheet and cook until brown and crisp, about 20 minutes or till tender.
3. Mix 2 tablespoons of oil, cayenne, mustard, honey, salt and pepper and mix.
4. Transfer carrots to plate and pistachios, mint and drizzle dressing. Serve immediately.
