Chinese style mushroom and potato stew with chickpea and spinach, I added dried shrimps to give the whole dish a bit of umami flavour.

gingerandchorizo From my experience, skin on chicken seems to be able to keep its moist slightly better than skinless one, but I think because of the chicken is cooked in a sauce half way through, it remains juicy...
