Moroccan Meatless Monday. Char-roast 5 Roma tomatoes. Add to a can of diced organic tomatoes, chicken stock, garlic, sautéed onion & Moroccan spice blend. Add pearl couscous and simmer till tender. Grilled Lebanese pita with olive oil, za'atar and sumac. Top with fresh coriander & pine nuts. Smile
