does anyone have EASY vegetarian recipes? my mom never cooks dinner so we have resorted to eating out every day, which in turn, makes me feel sluggish, and is NOT healthy. help!

I have recently taken a liking to tofu, you can make scrambled eggs with firm tofu,cumin,nutritional yeast, and tumuric. Or go extra firm and make spagetti with tofu meatballs

I have a ton of easy vegetarian recipes on my blog that you can check out. http://www.annefood.com/?tag=vegetarian Definitely let me know if you have any questions about any of them!One of my favorites is straightforward—I love roasting veggies in the oven and serving them on top of brown rice, or brown rice pasta (follow the cooking instructions on the pasta/rice box). Cut up some veggies (broccoli, sweet potato, squash, onion, parsnip, carrots, cauliflower, or green beans all work great) and toss them with olive oil, salt and pepper. Spread them on a baking sheet and cook them in the oven at 375 degrees for 20-40 minutes or until they are soft and start to show some color. Then spoon the veggies over the rice or pasta. You can drizzle olive oil on top, or toss with some grated parmesan cheese.

@mads! Some easy vegetarian dishes I love (you can also see them on my profile). 1. Quinoa, red lentils, broccoli, and mushrooms. The great thing about all of these is that they take about the same time to cook, so you can put them all in 1 pot to boil together. Just add some salt, pepper, and olive oil. you can also use frozen broccoli and mushrooms to make it easier. Frittata - chop up some onions and any veggies you have in the fridge (love spinach and mushrooms) and quickly saute them. In a separate bowl, whip up some eggs, pour them in a baking dish and add the sauteed veggies to the eggs in the pan. Bake for 20 minutes on 375, and you have dinner + leftovers for lunch!
