Brown rice spaghetti with ratatouille
I made ratatouille last night and have lot of leftover, so I am having it for lunch again!
Today I cleared out the fridge and made these veggie patties #nofoodwaste
I have been eating less meat after joining the challenge, it was hard in the beginning but meal like this one is so easy to make, delicious and healthy, which really helps me not missing meat that ...
1. the rice paper shouldn't be dipping into the water for too long, since it will get softer and ready to be rolled by the time you put the filling on.
2. Your hands and the work surface should be slightly moist so the rice paper won't stick.
