Brussel sprouts right off the stalk just taste better. Sure, it's a bit more work but it's usually cheaper, and a good knife and a little Beyoncé playing in the background make it super simple to get these nuggets off the stalks.

Quinoa, lentils, avocado, roasted beats, roasted chickpeas, with tomato-cucumber salsa. This delicious dinner came together in about 25 minutes, and it’s balanced and full of veggies!

annefood Agreed- I keep whole grains and beans in the pantry and when I don’t know what to do for dinner I just throw them in a bowl with a veggie or lettuce and some dressing.
