I present rhubarb meringue pie ☺️
There's all this rhubarb in the kitchen, so I tried something: rhubarb curd. Cooked down the rhubarb with some sugar; puréed it in the good ole Vitamix, and added it to an egg custard simmering on the stove. included some cornstarch....and it worked!
All-Purpose White Wheat Flour Unbleached, Butter without Salt, Cornstarch, Granulated Sugar, Lemon Juice, Rhubarb, Shortening, Egg, Kosher salt
