Chinese style mushroom and potato stew with chickpea and spinach, I added dried shrimps to give the whole dish a bit of umami flavour.

You can add any extra veggies you like, I added frozen green peas here. A great way to use up leftover veggies

gingerandchorizo I just simply add chia seeds in the orange juice, stir and wait for 10 minutes and then enjoy! 😊@mirasingh
