annefood 6yr Hey @ScountMQ ! Great question about two delicious foods! Squash: my favorite way is to peel and deseed it, cut it into small cubes, and spread it on a baking sheet. Toss it with olive oil, sea salt and black pepper, and whatever spices you like (fresh sage, dried herbs, chili flakes, etc.). Roast at 425 degrees for about 30 minutes, tossing halfway through. It stores well in the fridge, and can be eaten cold or at room temp for an easy snack. You can always drizzle with extra olive oil or a vinaigrette before snacking. Sweet potatoes: I like to wrap whole sweet potatoes in aluminum foil, and roast in in the oven at 450 degrees for about an hour, or until tender when you poke it with a fork. Again, store it in the fridge and drizzle with olive oil or vinaigrette when you're ready to eat. OR sweet potato fries! These are also good cold with olive oil and extra sea salt and pepper. Either squash or sweet potato pairs really well with cooked greens and whole grains, both of which can also be made ahead and stored in the fridge for on-the-go meals.

garv 6yr @annefood love your ideas. Pls cook for me the next time I’m visiting! @ScountMQ I make sweet potato , sesame & chilli kibbehs. Great as a snack or to up the nutrition factor to your meal.

ScountMQ 6yr @garv sounds good, is that made by grilling raw sweet potato with those other ingredients?

garv 6yr Yes, sear it in a pan on a low flame. In case it’s bit too mushy, add some bread crumbs to bind it.

DietID_TeamDietitians 6yr @ScountMQ this is SO simple, but I liked eating raw squash slices or sticks with hummus. This is my go-to when i'm hungry and have very little time. As for sweet potatoes, I like making 'chips' at home. I thinly slice, toss with olive oil, sea salt, paprika, and oregano and bake. These are perfect on their own, or with some guac.

ScountMQ 6yr @garv I had to look up kibbeh, and now I understand. I misread it as a kabob. Kibbeh sounds like a really versatile dish and I love the idea of using sweet potato in it. Thanks!
