There are so many decisions taking place behind the scenes before a student sits down to a meal at school - here is one school district trying to impact it's bottom line in feeding 21K students a day. I can only hope that by treating the cafeteria more like one business, the school district has more freedom to make better food choices (i.e. vegetarian, ethnic dishes like they mention in the article) for their students.
