Super article. I've been bouncing ideas off my peers to strike a balance between desserts & nutrition . Strangely, they all felt that it's counterproductive!

Ha! Totally doable. I think desserts made with whole food sweeteners like figs and dates are super delicious and also more nutritious. Also - I'm a big fan of small desserts. Oftentimes you order a dessert and it is overflowing, so you don't know how or when to stop.

@Gwendolyn my professor from bakery & confectionery felt that it takes away from the very persona of a dessert (butter+flour+sugar) as it is meant to be indulgent . My peers felt that it doesn't make business sense as people are out to treat themselves to a dessert ; calories included! In Bombay, 85% of desserts sold are chocolate based, so everyone tends to play safe!

@Rachna figs , dates & honey work brilliantly for a lot of desserts, but for most people it's about the sugar rush which isn't quite associated with figs etc. I'm trying to source purer forms of sugar as the first step.
