DietID_TeamDietitians 8yr As far as I know, black peppercorns started out green, but were dried, so that is why they are now black. White peppercorn also started out green, but they had their skin removed and are effectively the seed of the green peppercorn. White peppercorn do taste a bit different - a bit more earthy, but not dramatically different. You should experiment with one or the other and see if you can tell!

JenniferEmilson 8yr It's good to have both in your pantry. The taste is totally different. White has more kick, and is used traditionally in European cooking for 'white' dishes: mashed potatoes, cream soups, steamed turnips etc, so that the black flecks don't 'spoil' the finished presentation!
