Spaghetti squash is so versatile!
Was doing some recipe testing and have fallen in love (in so many ways) with Spaghetti squash. Made a delish coconut broth soup for a dozen friends and was so nourishing! And even salted the seeds and baked them, which I find spaghetti squash seeds are the easiest to extract of all pumpkins. Toss spaghetti squash l with olive oil halves down on a baking dish in oven at 375• for 40 mins. Scrape and voila!
