So helpful. I'll have to try it out. I've tried some of the other boxes and they tend to be meat and grain heavy, and take a bit longer to prep

@mariampa - how do you manage these in so short of time? The instructions almost always say 45 minutes, and I'm so slow at the prep that it pretty much invariably takes me over an hour. Like with the popcorn posole, it took me nearly half an hour just to do the prep part of Step 1 alone, just to get ready to start pureeing. Start to finish, I was cooking for about 1:20 or so on this one. It's so discouraging. I've only recently gone vegan and switched over to Purple Carrot. Before that I used another meal prep service that unfortunately doesn't offer vegan options, but those never took me more than 30 minutes to cook and rarely more than 2 pots/pans. This is just so much more labor-intensive for me.

I agree @thisisheather - some take me a long time too. I like them on the weekends and not when I get in from a long day at work. I'll think of some more tips, but in the meantime, my all vegan blog might help! Lots of easy recipes under the recipe tab and organized by type, app, soup, main etc. π±β¨

@thisisheather my food processor and my vitamix are like diamonds and fancy cars to others. I don't think I can make a pie crust without my cuisinart. My hands are always hot.

Thanks Rachna! Sadly, the time-management part makes sense to me already, and TPC's instructions are very helpful in telling you to prep these things while that's cooking, etc. I honestly think it's just my abysmal knife skills and lack of a food processor that's the problem. I am just super, super slow and poorly coordinated with a knife. I guess that will get better with time ... and I just bought a food processor online ;-)

I totally hear you! I have terrible knife skills primarily because I never learned how to use a cutting board. I've now tried to at least sharpen my knives, which makes chopping so much easier. No food processor yet for me, but I hope yours makes Your life easier! πππ
