Mine is some kind of stir-fry. Leftover grain, tofu/chickpea/egg, whatever veggies are in the fridge, and rice vinegar, tamari, ginger, and sriracha (all staples in my fridge) topped with cashews, of course!

Best fast dinner - sautéed edamame, greens, and garlic topped with a pouched egg, hot sauce, and hummus or avocado.

Recently into brown rice and millet ramen made with miso, edamame, mushrooms, kale, broccoli and a dash of Sriracha!

This is going to sound weird but I've made this more than a few times: cooked brown rice noodles tossed in bragg's aminos, sesame oil, raw kale, and roasted Brussels, placed in a sauté pan, I then crack an egg over it all. I throw it under the broiler until the egg whites have been set and the noodles a bit toasted. An upgrade from the college ramen meal days. 😂

Sautee some Kale with Olive Oil. Chop up some other veggies, I usually have tomato, maybe a pepper. Chop up a sausage too. Throw it all in the frying pan. Can add a piece of toast if hungry. Super quick and easy.

Roast trout with sautéed balsamic radicchio. 10 minutes and you're done.

Oh I love this! I end up making lots of quick prep time dinners. Sometimes I come how a throw some lentils, chopped greens, tomatoes, spices and a little rice into a steam cooker and come back in a half hour for a mushy hearty dinner. It takes about 30 minutes to cook, but prep time is only 5 minutes

My favorite are rice bowl of some sort: topped with tofu, nori, kimchi, egg, any veggie in the fridge for a quick stir-fry. Or on noodle soup :)) I have some rice bowl recipes on my blog, check it out if you need idea!
