I learned another Indian dish to get in my veggies - Orro- roasted eggplant stewed with spices.
Day 1/30: Eat 5 Servings of Fruits & Veggies Per Day Level IV
Apparently this is what farmers in India eat, often picking fresh eggplant and roasting it in the fields.
