Where's your favorite coffee from?
santeustachioilcaffe.it
Are you always trying out new coffees and will only buy beans? My fave is Sante Eustachio from Rome since 1938. Tastes like earthy deep cacao.

MargaretG Love Saint Eustachio!

MarissaFeinberg I love La Colombe

Georegulus Welcome!
At Tampa Bay farm-to-table restaurants, you’re being fed fiction. How do we validate the claims of "farm to table" restaurants!?
tampabay.com
A lot of you are in the restaurant industry so have you ever made menu claims that aren't true? And how can we ensure what is represented on the menu (e.g. Local) is true??

mirasingh This is crazy! It's like the fish story!
What is Food ?

Food. There are so many aspects to it that an entire encyclopedia could be
written on it. For many cultures food is more than what we ingest. In the

DietID_TeamDietitians Food is one of the only things that unites us all, and somehow also divides us. It should be an equalizer - all barriers break down when you break bread together, but that isn't currently the case.
-
unconventionalbaker Hm... interesting argument. There's definitely something to food that holds cultures together. But I think the worship of the sun and stars and the traditions that come from that have a stronger...
-
mirasingh Great point @unconventionalbaker. I think food for some people has become a routine - because we don't have a connection to food anymore. I don't agree with that, but I think that's where we've come
Does anyone have a good falafel recipe?

Has anyone checked out Mother Jones new podcast, The Bite?
motherjones.com
"For people who think hard about their food." I think a lot of Foodstanders would love it.

unconventionalbaker Interesting. Will have to check it out.
Wheatgrass - love it or hate it?
We grow and sell a good bit of wheatgrass, but have found it to be a polarizing crop as well. It's health benefits are very contested. Some swear by it, some swear against it. What are your thoughts?
-
DietID_TeamDietitians I'm not a die hard fan because it's made me feel a bit sick to my stomach once. Other than that, I know it's packed with nutrients but there hasn't been any good research on that I've found. Anyone...
-
lauren What are the uses other than juicing?
-
olivettefarm @Rachna I've also yet to find any strong research on the benefits of it, a lot of it is still anecdotal at this point..to my knowledge at least. The breakdown of nutrients actually isn't that...
Why tech people drink soylent - via the NY Times.
nytimes.com
I don't understand why this is such a good thing? Has anyone tried it? Is this really some big innovation?
-
Udi We ponder this question a lot at the office. Thanks for sharing
-
brittanymbarton sounds awful. I've heard it described as drinking pancake batter. Not to mention I don't think it's possible to get adequate nutrition from it.
-
gingerandchorizo I don't think I can ever do that because I love eating too much ;-)
Michael Pollan Wants You To Eat Gluten - in the form of fermented sourdough...

Have any of you gluten-free folks tried this? #foodnews
-
sugardetoxme Only thing @georegulus will eat!
-
sugardetoxme Wonder if @unconventionalbaker can weigh in!
-
JenniferEmilson I've been living like this for over a year now. Only sourdough bread for me. It is definitely easier on the gut, and the probiotics created in the fermenting process eliminate a lot of what I...
Why Hunting Down 'Authentic Ethnic Food' Is A Loaded Proposition- price of ethnic food is tied to our view of that ethnicity's place. Agree?
npr.org
Great piece about Krishnendu Ray's new book. In terms of price correlation to an ethnicity's place in the world, I think price is also driven by new immigrants of that ethnicity not wanting to pay ...
-
garv Interesting point of view ! Every so called ethnic cuisine that travels to foreign lands evolves from being cooked to satiate that expat community's cravings to becoming an accepted / sought after...
-
DietID_TeamDietitians @garv such an important trajectory to understand. I also find it interesting that even once an ethnic cuisine becomes mainstream in a foreign land and adapted to that flavor palette, there is still...
-
garv @Rachna couldn't agree more. That's the beauty of f&b , there's room for innovation & respect for authenticity!
Do you compost? I'm amazed at how quickly it breaks down!
That squash isn't something I tossed- it grew out of my compost pile!
-
sugardetoxme That's so cool!!!

DietID_TeamDietitians Wish super cool!

brittanymbarton gorgeous! I love seeing food growing out of the compost!
