Congee is a type of Asian rice soup which we eat often back home. There are many kinds cooked with all sorts of different ingredients. This one is cooked with dried scallops, served with dried anchovies (from my home town Macau) and toasted sesame seeds.

I bought a bunch of beautiful beetroots with their greens still attached, so I made beetroot salad for one meal and used the beet greens for this simple and delicious dish! #nofoodwaste
