Ok I had a second dinner. But it was breakfast for dinner at Russ & daughters. All of us had the classic plate of smoked salmon, red onion, capers, and tomatoes. I went with pumpernickel bread. Stuffed and happy ☺️ @shannonvittoria @jessicaholmes

Quinoa, lentils, avocado, roasted beats, roasted chickpeas, with tomato-cucumber salsa. This delicious dinner came together in about 25 minutes, and it’s balanced and full of veggies!

annefood Agreed- I keep whole grains and beans in the pantry and when I don’t know what to do for dinner I just throw them in a bowl with a veggie or lettuce and some dressing.
