Almonds, Honey, Olive Oil, Spelt, Vanilla Extract, Rolled Oats, Coconut, Strawberry Jam, Himalayan salt, Brown Rice Syrup
This is a new twist on a favorite from our old cafe - the almond jam dot cookie !
4 cup almonds,
toasted
2 cup oats
2 cup spelt flour
1/2 cup sesame oil
1/2 cup rice syrup
1 cup agave nectar
1 TBS vanilla
1 tsp sea salt

Toast almonds @ 300 degrees
for about 10 to 12 minutes or
until fragrant. Blend half the
almond with the oats until fine.
Place in a bowl. Put the
remaining almonds in cuisinart I mean Vitamix!
and pulse until coarsely ground.
Add to the bowl along with spelt
flour and mix well. Wisk
together oil, rice syrup, maple
syrup, vanilla and sea salt.
Add to dry mixture and using
your hands mix very well.
Scoop onto a parchment lined
sheet pan and press.
Using a TBS I mean your thumb! make an
indentation in the center of
each cookie and spoon in 1-2 tsp of your choice jam - apricot works great so do raspberry and strawberry...
