Yes! There are some super easy healthy meals you can make with a mini-fridge and a microwave or hot plate. I was a huge fan for frozen chopped veggies like spinach or edamame. They steam nicely in the microwave, and taste great with some simple spices herbs. You can also top them with a scrambled egg and cook in the microwave. I also like sweet potato toast with avocado. You can either toast the sweet potato like slices of bread or steam in the microwave. Hope that helps!
