First experiment with chickpea pasta- it was a success!!
Day 17/30: Eat 5 Servings of Fruits & Veggies Per Day Level IV Made a quick sauce to go with chickpea penne made with tomatoes onions mushrooms broccoli garlic and chili, and slow simmered. This was a super easy way to get a veggie and protein packed dinner together with 2 pots and very little prep time. Leftovers will make a perfect lunch tomorrow π
