I’m not the biggest coconut lover, but this curry is soooo creamy and amazing thanks to the coconut milk. Be sure to add the lime at the end, it makes all the difference :)
Was looking for something easy today for dinner, this combines my love for runny yolks with my love for egg salad sandwiches, I didn't even miss the mayo!
