What's the secret to easily wrapping these summer rolls? I always mess them up!

I think
1. the rice paper shouldn't be dipping into the water for too long, since it will get softer and ready to be rolled by the time you put the filling on.
2. Your hands and the work surface should be slightly moist so the rice paper won't stick.
