Great piece about Krishnendu Ray's new book. In terms of price correlation to an ethnicity's place in the world, I think price is also driven by new immigrants of that ethnicity not wanting to pay for "authentic" food that they can cook at home. When it comes to Indian food, I have a hard time paying a Hugh price for average authentic Indian food because i know how to make it, it seems normal. So perhaps the price floor for ethnic food when it first enters the market is also driven by new immigrants of that own ethnicity. Just a hypothesis
