Baby Japanese Daikon. The greens are also great when they're this size. I like to simply sauté them with garlic and olive oil. #NoFoodWaste

Red Russian Kale, Napa Cabbage, radish micro, dill and Tuscan Kale. These are all from thinning out our seedlings in the greenhouse. I always love making salads off of our thinnings #nofoodwaste

Leeks doing their morning stretches.

Our little leeks are happy in the greenhouse. It's easy to forget that the giant leeks you're used to start out more like a blade of grass.

Amaranth Microgreens

A study found that amaranth micros have 4-6 times more nutrients than their full grown counterparts. They have a flavor very similar to beet micros, just a bit more mild.
