Chef
Evan Elman grew up in Cambridge, MA and attended the University of British
Columbia. After University, with over a decade of cooking under his belt,
Elman worked as a corporate sous chef for two years, and then was recruited
by the Flying Pig, a Nuevo Canadian restaurant that specialized in upscale
comfort food. Working within that company, Evan helped open Wildtale, a
seafood-focused restaurant that featured the finest ingredients that the
Pacific Northwest had to offer.
Six months after opening Wildtale, Elman was recruited to serve as a sous
chef on a 383-foot expedition cruise ship bound for three months in
Antarctica. From October, 2015 to December, 2015 Evan worked for over one
hundred hours a week in both calm and rough seas (including a few trips
through the Drake Passage). After working for fifty straight days and
fulfilling his contract, Evan felt as though his stamina had been tested,
and that he was ready to begin experimenting with new flavors in the realm
of fine dining. He returned to Vancouver in December, 2015, and was snapped
up by one of Canada’s highest ranked fine dining restaurants, where they
are creating inspiring and innovative food.
Sous Chef
Chef Zach Springstead was born in Hamilton, Ontario a Steel City where he
entered the culinary world at a young age. Springstead worked 6 days a week
for 7 years building his resume at different restaurants throughout the
Greater Toronto Area until he got his big break as Sous Chef at Seven
Enoteca Restaurant.
