I learned another Indian dish to get in my veggies - Orro- roasted eggplant stewed with spices.

Apparently this is what farmers in India eat, often picking fresh eggplant and roasting it in the fields.

garv Char the eggplant & cook it with the same ingredients along with ground peanuts or you can use a bit of peanut butter. Add fennel seeds (saunf) & you have a soopah dish!
